Lemon Pie

So one of my students from a few months ago is really just the most awesome person I've met here. Sol is the kind of mother who becomes everyone's mom and every time you see her you can't help but be in a good mood because she is always smiling. I've never met anyone so genuinely enthusiastic and positive. She also agreed to host two of my school's TEFL students when they wanted a homestay.

So I go over to visit her sometimes on the weekends and she's taught me how to make granola, tocino al cielo (a Peruvian desert) and a bunch of other dishes. I try to bring stuff too whenever I go so it's always such a fun lunch.

Here is the recipe for the super rich but delicious lemon pie we made.

Crust
2 cups corn starch
1 cup self rising flour
1 cup water
-mix everything together and kneed into a soft dough
-roll into a flat crust and lay in the pan
-bake on high for 20mins until golden brown

Relleno de lemon - Lemon filling
5 eggs separated
1 small can condensed milk
juice from 4 lime
-mix the yolks, condensed milk and lime juice until smooth
-pour into the pie crust

Topping
5 egg whites
1 cup sugar
-beat with a beater until fluffy
-put on top of the pie. Use the back of a spoon to make little mountains on top of the pie.

Bake for 25 or 30 minutes until the top is golden
